Six years before it goes on sale. Six months fermenting in steel, three and a half years in oak barriques, two years resting in bottle. That is what Cannonau needs to lose its edge without losing its character, and it is time nobody takes when producing for volume.
The blend is by Angelo Angioi, among the most recognised winemakers working in Sardinia.
The first vintage was released in 2,280 units. Every vintage of Immortale exists once: when it is gone, we move to the next.
In the glass. Deep ruby with garnet reflections. Ripe forest fruit, spice, and the vanilla note that comes from the long wood. Full and balanced on the palate, silky tannin, persistent finish.
Serving. 18 °C / 64 °F. Open an hour ahead or decant. Holds two to three days once opened.
At the table. Red meat, game, cured meats, aged pecorino. In Gallura it is drunk with roast kid.
