Six months in steel, three and a half years in oak barriques, two years resting in bottle. That is what Cannonau needs to lose its edge without losing its character, and it is time nobody takes when producing for volume.

Gallura
Granite, wind and wide day-to-night temperature swings. This is northeastern Sardinia, and it gives Cannonau concentration without taking away its freshness.

In the glass
Deep ruby with garnet reflections. Ripe red fruit, Mediterranean scrub, spice and the vanilla of long oak. Silky tannin, persistent finish.

Red meat, roasts, game, cured meats and aged pecorino. In Gallura it is drunk with roast kid or suckling pig.

Frequently asked questions
What is Cannonau di Sardegna?
It is the most widely planted red grape in Sardinia and gives a full-bodied, warm red with firm tannin. It is genetically the same grape as French Grenache and Spanish Garnacha: what changes is the climate and the granite soils, which give it more body and higher alcohol.
Why six years of ageing?
Cannonau's tannin needs time to lose its edge without the wine losing its character, and the two years in bottle integrate what the oak has done. Six years of capital tied up is a cost volume producers cannot carry: that is why most Cannonau is released one or two years after harvest.
Can it be cellared?
It is built for it. Cannonau's tannic structure and alcohol are what let a wine travel through time, and six years between oak and bottle have already done the most delicate part of the work. It drinks beautifully now and has many years ahead of it. Store the bottle lying down, in the dark, between 12 and 16 degrees, away from temperature swings.
How is it served, and how long does it last once opened?
At 18 degrees. Open at least an hour before serving, or decant: after six years the wine needs a moment to open up. Once uncorked, the bottle holds two to three days if resealed and kept cool.
